The Perfect Pancake ingredients for 7 portions:

  • 700 g flour, wholemeal flour can be used if you like

  • 1,313 ml milk, low in fat

  • 1 pinch (s) of salt

  • 5 ¼ large egg (s)

  • 1 ¾ dash of mineral water

  • Butter, for baking

 

Preparation

⏲ Working time approx. 5 minutes

⏲ Rest time approx. 1 hour

⏲ Cooking / baking time approx. 20 minutes

⏲ Total time approx. 1 hour 25 minutes

Yes, I know what many think now. The CK (or the world) still needed that: A recipe for pancakes !! But believe me, from my own experience I can tell you: It is necessary!

  1. Mix the flour, milk, eggs and a pinch of salt with a hand mixer to form a smooth dough until it bubbles up slightly. Then let the dough rest in the refrigerator for about half an hour. 

  2. Then take the dough out of the fridge, add a good dash of mineral water and stir again briefly.

  3. To begin with, heat up the stove top and add some butter to the pan.

The most consistent way to make the pancakes is:
Remove the hot pan from the hob and swirl the butter evenly across the pan. Now put a ladle of batter into the hot pan with a large ladle and distribute it evenly by swirling.

Important:
In any case, wait long enough until the underside is really nicely browned and the pancake has set accordingly. It's easy to notice when you try to lift the pancake with the spatula. If that's really easy, then you can turn the pancake without any problems without it tearing. Now bake the second side until it is golden yellow.
